I’m in love with these Healthy Rainbow Roll Ups with Peanut Sauce for two reasons. 1.) They are delicious and 2.) They are so pretty! I wasn’t sure I was going to love the curry hummus that you spread inside the wrap, but it was actually super delicious. When you are eating healthy or just clean, it’s super important to play with the flavors to make your food more interesting. I found the yummiest coconut curry hummus at whole foods and will definitely be buying it just to dip my carrots in at home.
These healthy rainbow roll ups with peanut sauce are a definite crowd pleaser, I even made them for dinner once for me and my hubby. If you have a Vitamix, you can add the ingredients for the peanut dipping sauce to whip it up really fast. These are definitely going to be at the top of my recipe list to make for friends who are sick or just had a baby!
