Healthy Rainbow Roll Ups with Peanut Sauce

I’m in love with these healthy rainbow roll ups with peanut sauce for two reasons. First, They are delicious and second they are so pretty! I wasn’t sure I was going to love the curry hummus that you spread inside the wrap. It was actually super delicious. Change up flavors to keep things interesting when you are eating clean. This will help keep you from being bored with your food. I found the yummiest coconut curry hummus at Whole Foods and will be buying it again. It’ll be great for dipping carrots on the go or added into a homemade salad dressing. 

These wraps are a definite crowd pleaser, I even made them for dinner once for me and my hubby. If you have a Vitamix, you can add the ingredients for the peanut dipping sauce to whip it up really fast. These are going to be at the top of my recipe list to make for friends who are sick or just had a baby! You can add additional vegetables or a protein of your choice as well. I love how versatile they are, and that you can use what you have on hand. If you can’t find collard leafs, you can always use the classic rice paper wrap. Healthy Rainbow Roll Ups with Peanut Sauce

Ingredients

Scale
  • Large collard greens or lettuce leaves
  • Shredded vegetables
  • Brown rice
  • Hummus

For the Sauce:

  • 1/2 cup creamy natural peanut butter
  • 3 tablespoons sweet red chili sauce
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon honey

Instructions

For the sauce:

Measure the peanut butter, sweet red chili sauce, apple cider vinegar, soy sauce, and honey out into a small glass bowl. Whisk together until blended smoothly.

Arrange the wraps by layering hummus, rice and vegetables of choice in the center of the wrap. Roll up and dip into sauce.

    I love the window you are sitting in front of. We are renovating our kitchen and adding a window and I love the dark casing. Is it white on the outside of your house or dark also. Do you know the brand? Love love it.

    Do you still do photography? You took my granddaughters pictures 8 years ago. I love those pictures so much.

      Thank you! These are custom metal windows, I have two this size and then one big triple one in front of my sink. They are handmade and insulated. Typically, metal windows are drafty and not energy efficient, but these have been fantastic and of course the look is what I’m most in love with! And of course I remember photographing your granddaughter years ago…I still run the studio full time 😉
